Naolinco is a small community in Mexico’s Veracruz region, north of Oaxaca, across the Sierra Juárez mountains. Wind patterns, rainfall, sunlight, and temperature differences make close neighbors incredibly distinct.
Producers in Naolinco individually produce little coffee, only 1-2 hectares, and what we end up tasting is a blend of many producer’s crops. This means that instead of a specific microlot from a specific producer yielding specific flavors, this selection of Naolinco represents the region as whole. The cherries are then fermented for 48 hours for extra sweetness and machine dried over 60 hours, much faster and more consistent than sun-drying.
