Finca Rosita has become an Alana's staple, and each year it only gets better. With a focus on quality and exploration, Finca Rosita separates some of their lots by varietal. This selection is a Pacamara, a varietal known for its usually large size and deep earthy flavor. 

Originally developed in El Salvador in the 1950s, Pacamara is a cross between Pacas (a Bourbon mutation) and Maragogipe (a large Typica mutation). It does well in cool environments and high elevations due to the prolonged development phase in those conditions. Longer maturation leads to more complex flavors. 

Because Pacamara is vulnerable to disease and crop failure, and because of its lengthy growing demands, it is not a popular varietal amongst most producers, which is what makes Finca Rosita’s decision to grow it bold and risky. The risk paid off here.
